Lively and elegant champagne, perfect as an aperitif or at the beginning of the meal.

Appellation: Champagne

Varieties used: 100% Chardonnay, Blanc de Blancs

Terroir: Cuis, Chouilly, Epernay and young vines from Cramant.

Vinification
 

Fermentation in thermostatically controlled vats.
Blend of wines from two years.

Dosage: 6-8 g/l

Serving temperature: 9°C in summer, 10-11°C in winter

Pungent yet refined nose combines spring flowers, caraway seed, minerals, citrus skin and apple. Brisk and pure but creamy, with incisive apple and citrus flavors and great finesse. Very light on its feet and perfumed in the mouth. Finishes floral, gripping and very long.

Scents of pear meld with a waxy, white root vegetable tone in this substantial blanc de blancs. Serve with buttery seared scallops.
